Add a little zest to any dish with these quick and easy Lemon Potatoes!
 
Preheat oven to 350ºF.  Boil 4 medium potatoes washed and cut into wedges (skin left on).  In a small bowl, mix together ¼ cup Oliv’s Mission EVOO, juice from one fresh lemon, 3 cloves of minced garlic, salt, and freshly ground pepper.  Drain potatoes and spread in a single layer on a rimmed baking dish.  Pour olive oil mixture over potatoes coating evenly and bake for 30 minutes (or until potatoes are tender, stirring once or twice).  Increase oven temperature to 425ºF and roast until crisp.
